MBKM Independent Internship at Artotel Sanur Bali: A Japanese Literature Student’s Experience in Food and Beverages

My name is Doni Eka Saputra, a student majoring in Japanese Literature at Udayana University. In my 6th semester, I decided to join the Independent Internship program under MBKM, as a way to explore experiences I wouldn't normally get in the classroom. The program ran from March 3rd to June 30th, 2025.

For this program, I chose Artotel Sanur Bali as my internship location. There are several departments at Artotel Sanur Bali: Front Office, Housekeeping, Human and Resource Development, and Food and Beverages Service. I chose to apply to the Food and Beverages department and was placed at a restaurant affiliated with and located right next to Artotel Sanur Bali that is Lidah Lokal.

During my internship at Lidah Lokal, I worked under the supervision of the Food and Beverages Manager, Mr. Ida Bagus Gede Budi Wirawan, or Mr. Gusde as he's usually called. Under his guidance, along with the help of senior permanent and daily staff, I was trained to become a waiter who met Lidah Lokal's standards.

As a waiter, I was required to master the sequence of service, which includes several stages from greeting to farewell. To better explain the menu to guests, I had to memorize all the menu items at Lidah Lokal, including the taste and ingredients from appetizers, main courses, side dishes, desserts, to all drinks, both alcoholic and non-alcoholic.

In addition to working in the restaurant, I also handled room service duties at the hotel, such as delivering amenities and food or drinks to guests after check-in. Whenever the opportunity came, Mr. Gusde often assigned me to serve Japanese guests or tour groups from the initial greeting to the farewell.

This internship helped me develop skills I couldn't practice in class, such as speaking English and Japanese spontaneously and naturally, working in a team under dynamic situations, communicating properly with superiors, and understanding the disciplined work ethic at Artotel Sanur Bali.

Being a waiter also gave me plenty of chances to learn new things, especially through fun and meaningful conversations with international guests.

This independent internship significantly boosted my confidence and spontaneity in speaking English and Japanese. Artotel Sanur Bali has truly become a turning point in improving my communication and language skills.
